Ingredients For The Broth:

- 4 pounds of beef bones
- 1 large onion
- 4-inch piece of ginger
- 5-6 star anise pods
- 3-4 cloves
- 2 cinnamon sticks
- 1 black cardamom pod (optional)
- 1 tablespoon coriander seeds
- 6-8 cups water
- Fish sauce
- Rock sugar or regular sugar
- Salt

Ingredients For The Soup:

- 8-10 ounces dried rice noodles (medium thickness)

- 1 pound beef steak, thinly sliced

- Fresh bean sprouts

- Fresh Thai basil leaves.

- Fresh cilantro leaves

- Fresh mint leaves

- Thinly sliced green onions

- Lime wedges

Instructions:

1. First, char the onion and ginger. You can do this by placing them on a hot grill or directly on a gas stove flame.

2. Put the beef bones in a large pot, cover them with water, and bring it to a boil. Allow it to boil for about 5 minutes, then drain the water. Rinse the bones with cold water to remove any impurities.

3. In a dry skillet, toast the star anise, cloves, cinnamon sticks, black cardamom (if using), and coriander seeds until they become fragrant. Be careful not to burn them.

4. In a large stockpot, add the parboiled beef bones, charred onion, ginger, toasted spices, and water. Bring the mixture to a boil, then reduce the heat to low. Simmer the broth for at least 4-6 hours. Remove any foam or impurities that rise to the surface.

5. Add fish sauce, rock sugar (or regular sugar), and salt to taste. The broth should have a well-balanced, savory, and slightly sweet flavor. Adjust the seasonings as needed.

6. Prepare the rice noodles according to the package instructions. Usually, you need to soak them in hot water for a few minutes until they soften. Drain the noodles and set them aside.

7. Wash and prepare the fresh bean sprouts, Thai basil, cilantro, mint, and green onions. Slice the lime wedges and chili peppers if using.

8. Divide the cooked rice noodles among serving bowls. Top with thinly sliced raw beef steak.

9. Bring the broth back to a rolling boil. Ladle the hot broth over the raw beef and noodles in each bowl. The hot broth will cook the beef slices.
